Canadian Style Pancakes

Get ready for the weekend with these delicious and fluffy pancakes. Easily made with Soy butter and Soy milk as an alternative to regular butter from cow milk. 

Ingredients

  1. Soy, almond or haver milk

  2. All purpose flour 

  3. Sugar    

  4. Butter                      

  5. 1 Egg

  6. Few drops of Vanilla extract

  7. Baking powder

  8. Coconut butter or Oil

414 grams / 1 3/4 cups

354 grams / 1 1/2 cups

Steps

1. Put all the ingredients in a large bowl.


2. Mix all the ingredients together.


3. Heat a frying pan with soy butter, coconut butter or oil, or (olive) oil. On a medium heat. Make sure the pan is not too hot, otherwise the batter will burn before the inside of the pancake is cooked. 


4. Use two spoons to scoop up some of the batter and gently place it in the pan, while it's still soft you can shape it to your liking. Remember that the pancakes will rise a little because of the baking powder in the batter. At this stage you can add things to the pancakes, such as blueberries, bacon bits or (vegan) cheese.


5. Wait a few minutes before flipping the pancake. Wait until the bottom of the pancake is golden brown. You can use a spatula to flip the pancake; after you've flipped it, press gently on the pancake to even out the batter on the bottom.


6. When you're satisfied with the colour on both sides, remove the pancake from the frying pan. If there is a bit of excess oil or butter, simply place the pancake on some kitchen paper. 


7. Serve with maple syrup.
